The Subi is a lively (often noisy) dining room that serves some of the best pub food in Perth. What Brad Burton and his team accomplish from their tiny kitchen at the Subi defies belief considering the number of meals served. The menu may be too wide-ranging, but no-one is suggesting that the signature aged porterhouse be one of the dishes to go. It’s grain-fed sirloin, sourced from Vince Garreffa at Mondo Butchers, and served on a bed of spinach wilted in a small amount of clarified butter, with a beef stock and port reduction, a touch of bearnaise sauce, and shoestring fries. It’s arguably the best dish available in Perth at 11pm during the week and midnight on weekends. The wine list offers better choice than it has for some time, although it would benefit from a selection of wines by the glass at a wider range of prices. Expect well-organised, speedy service.

The large bistro in the Subi Hotel is deservedly popular because of the consistent high quality of the comfort food produced by chef Brad Burton and his team. On the menu you can expect to find a caesar salad; fish and chips with tartare sauce and a salad of greens; a satisfying pappardelle with a slow-cooked lamb braise; irresistible sausages and mash; and one of this town’s best steaks with bearnaise and fries. There’ll also be a well-cooked risotto, fish of
the day and possibly a steak-and-kidney pie with peas and chips. It’s a lively venue (impossibly noisy on Friday nights) and a place for enjoying
a meal with friends. The wine list has improved in recent times and features a good range of Western Australian wines and a reasonable selection by the glass. The kitchen is open much later than anywhere else decent in Perth.
