It’s a very beefy place, this. It’s all dark and cosy, almost clubby, with portraits of cattle hanging on the walls like past chairmen and a lingering aroma of char-grilled beef in the air. This is a kind of steak heaven, since there is an impressive range of cuts and ages. These steaks are not for dainty eaters. Take your pick of wagyu cuts, grass-fed yearling, or grass-fed 36-month-old, all dry-aged for a specified length of time. The texture of the meat is beautiful, fine and tender, and the flavour is almost sweet in its purity. A side dish or two is necessary – try the roast pumpkin and yam with yoghurt, or the creamed silverbeet instead of potato puree. For non-meat eaters, there is some wonderful seafood, often prepared with real lightness of touch, and some excellent salads. Dessert could be a glass of brut rosé and a strawberry cupcake, or cheese. The wine list is considerable.
Open: lunch and dinner daily. Licensed. Mains $36-$110.

In a refined yet informal setting on the Southbank waterfront, Neil Perry continues his commitment to fresh produce. The emphasis is on beef, with dry-aged and wagyu steaks so tender that a butter knife would just about do the job.
