After stints in Paris and London, where he garnered Michelin stars galore, chef Bo Bech has returned to Denmark to remake the bistro at Paustian. He has changed the waterside furniture showroom designed by Jørn Utzon (of Sydney Opera House fame) from ho-hum lunch spot to hip eatery. With high ceilings and an open kitchen, its must-haves include the Alchemist, a DKK750 ($164) surprise menu and Chlorophyll, an ode to vegetarian cuisine at DKK600 ($132).
