Part of chef Gastón Acurio’s expanding empire of eateries, La Mar is a lunch-only seafood destination. You can’t book and unless you arrive unfashionably early (midday), expect to wait up to two hours. Potent pisco sour (Peru’s renowned cocktail of grape brandy blended with lemon, egg white and sugar syrup), complimentary appetisers and a hip parade of people pass the time. Tiradito nikkei (paper-thin slices of raw tuna with soy and ginger), chupa de camarones (shrimp chowder), or whole baby sole in black butter with capers, will erase memories of queuing.
