Collins Kitchen is the hotel’s main dining area, with downplayed chic decor, lots of natural light and big open kitchens and food-display areas. Seafood, grills and the deli section are particularly good, as are the wood-oven dishes. Oysters-and-steak involves a choice of freshly shucked oysters and steaks (grass- or grain-fed, with ages given), or go for an oven-cooked blue-eye with roasted pepper. Menus change for each meal, with all-day dining and afternoon tea in the adjoining lounge area. The wine list is unusually good, with a wide range of varieties.

Major renovations have turned the staid old cafe into the bright and cleverly designed Collins Kitchen, a large open space with stations where food preparations are part of the theatre of eating. Choose from seafood, deli, grill, wok or patisserie. Try the good-value lunch sets: steak sandwich with chips and soup, or fish with salad and fruit. Have a drink in the evening at the Ru-Co bar.
Open: breakfast, lunch & dinner daily. Lunch sets $30-$38.
