Whether you know them as pancakes or hotcakes, Aussie cafés continue to dish out their unique spin on the humble stack. Here’s our pick of Australia’s best – and trust us, they’ll be worth getting out of bed for.

New South Wales


Ask any Sydneysider where to find the best pancakes in Sydney and they’ll likely direct you to Bills. Bill Granger’s classic rendition sees a stack of ricotta hotcakes laden with banana and honeycomb butter. On any given morning patrons make a beeline for its outposts in Bondi Beach, Darlinghurst and Surry Hills, which often mean queues. Luckily the dish is served all day. 


At Double Bay’s Indigo, you can choose between the full-milk pancakes with maple syrup and caramel glazed banana, topped with vanilla-whipped mascarpone, or the Canadian-maple bacon pancakes with fresh-honey mascarpone, poached pear and sugar honeycomb. Either way, you’ll be licking your plate clean (or at least wanting to). Try to nab a table outside and expect meals to arrive in speedy time. 


The Kettle Black

Head to The Kettle Black in South Melbourne and order the hotcake with ricotta, blueberries, maple, double cream and seeds. Decorated with edible flowers, it’s almost too pretty to eat. You may have to wait for a table, but trust us, your Instagram followers will thank you. 


Fluffy hotcakes packed with seasonal berries, whipped mascarpone, honeycomb, vanilla bean and house-spiced maple syrup? Yes please. With high ceilings and an industrial fit-out, Hobba’s casual-yet-cool setting is quintessentially Melbourne. Here you can get your pancake fix from 7am daily.
