Bistro Moncur is a Sydney institution that has never budged from its no-bookings policy. If you want to sample some of the best bistro food outside France, then you’ll have to leave your name and wait for a table like everyone else. The rewards for your patience include the famous fish soup, salt cod brandade, grilled sirloin and wonderful pork sausages.

“Bistro” here is used in much the same way you’d use the phrase “What, this old thing?” But despite the polish and the hefty prices, there’s something democratic about the no-bookings policy. What you get at Moncur is simple food raised to the level of art through an appreciation of craft and raw materials. Thus, pure pork sausages with mash and onions sets you back a little under 30 smackers, but tastes like a million dollars. You get the freshness of soft quail eggs and quail meat with a salad of barley, capers and nasturtiums. You can pretty much order anything from the menu with the confidence that it’s going to be good.
