The restaurant that best shows Sydney off is
Catalina, at Rose Bay, which, in the right weather, can be reached via water taxi.

For designer fashion, I steer guests towards
William Street, in Paddington, for an obligatory stroll. It is Sydney’s fashion jewel in the crown – what Carnaby Street was to London in the 1960s.

For the perfect gift/memento
I’d go to Flame Opals (119 George Street, The Rocks).

To see some great art, I’d go to
The Art Gallery of NSW. It has a world-class collection, including seminal works by great Australian artists. My favourite is Sidney Nolan. We have four Nolans hanging in the lobby of my hotel – I could gaze at them for hours.

When friends were last in town, I took them for a drink at
The Argyle Hotel, in Argyle Street, The Rocks. They adored the design concept and relaxed vibe.

Sydney’s best-kept secret is
Sydney Observatory.
