Sydney’s T1 International terminal has welcomed a new breed of airport eateries that focus on quality produce. Top-flight chefs Wolfgang Puck, Shannon Bennett and Mike McEnearney are re-inventing the Sydney International Airport dining precinct so turning up at the airport hungry is no longer risky – though missing your final call lingering over dessert is. Grab your passport and make a beeline for Sydney Airport’s new eateries.

Home style

Kitchen by Mike focuses on seasonal and ethically sourced produce and home-style cooking in an airy, two-storey, 90-seat dining room. Breakfast is mostly à la carte (freshly poached eggs and homemade baked beans) while lunch and dinner are typical Kitchen by Mike canteen-style – your choice of colourful salads and wood-roasted meats. 

Oscar quality

The Bistro by Wolfgang Puck spans two levels and serves breakfast, lunch and dinner. The chef, whose resumé includes 21 years of catering the post-Oscars Governor’s Ball, chose Sydney as the first Australian outpost for The Bistro, a more casual dining experience with a focus on hearty comfort food. Think steak frites, Wagyu beef burgers and fluffy cinnamon-spiced buttermilk pancakes. 

Bun fight

Benny Burger is a world-first created by chef Shannon Bennett, better known for his three-hatted Melbourne restaurant Vue de Monde than flipping burgers. The fine-dining mentality has surely infused the menu – options include a prawn burger with black brioche bun. However, even the most traditional of burger connoisseurs must admit defeat in the face of The Chang (a dig at US chef David Chang who threw shade on Australian burgers in 2015): a Blackmore Wagyu beef patty complete with pickled beetroot and a free-range fried egg.

Caffeine fix
